Essential oils (EOs)

If you have ever inhaled the delightful bouquet of a rose, brushed against a rosemary bush, or worked with fresh cut mint, you already know how powerfully aromatic essential oils are. In addition to their distinctive aromas, essential oils provide plants with protection against predators and disease and play a role in attracting insects and such for plant pollination. 

Essential oils are naturally-occurring aromatic compounds hidden away in the seeds, bark, stems, roots, flowers of plants.

According to at least one expert source, "essential oils are non water-based phyto-chemicals made up of volatile aromatic compounds. Although they are fat soluble, they do not include fatty lipids or acids found in vegetable and animal oils. Essential oils are very clean, almost crisp, to the touch and are immediately absorbed by the skin. Pure, unadulterated essential oils are translucent and range in color from crystal clear to deep blue."

Try this: Rub your finger along the inside of fresh lemon peel. Then sniff. That fragrant residue is the remnant of the fruit's essential oils.
